Ingredients
  

  • 250 g fresh strawberries hulled and sliced
  • 200 g granulated sugar
  • 120 ml milk dairy or non-dairy
  • 2 tablespoons honey optional
  • 1/4 teaspoon salt
  • 10 popsicle sticks
  • 10 ice lolly moulds
  • Water
  • Parchment paper

Method
 

  1. Mash the strawberries in a blender or food processor until they're smooth. You should end up with about 250g of puree. Add the sugar, milk, honey (if using), and salt to the blender and blend until well combined. Taste the mixture and adjust the sweetness to your liking.
  2. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any seeds or pulp. Discard the solids.
  3. Fill each popsicle mould with the strawberry mixture, leaving about 1-2cm of space at the top. You can use a piping bag or a spoon to get the mixture into the moulds.
  4. Cover the tops of the moulds with parchment paper or plastic wrap and insert a popsicle stick into each one. If using parchment paper, make sure to press it down firmly onto the mixture to ensure it stays in place.
  5. Place the moulds in the freezer and freeze for at least 4 hours or overnight. You'll know they're ready when they're solid and the sticks come out easily.
  6. To unmould the popsicles, run the moulds under warm water for a few seconds to loosen them. Gently pull out the sticks and serve immediately.
  7. Enjoy your delicious homemade strawberry popsicles!

Notes

Ensure to strain the mixture for a smooth popsicle texture, free from seeds. Adjust sweetness to your preference. Running moulds under warm water helps in easy unmoulding.
