Ingredients
  

  • 4 boneless skinless chicken breasts (about 150g each)
  • 1 tablespoon olive oil
  • 2 shallots finely diced
  • 2 cloves garlic minced
  • 250 ml good-quality lemonade not diet or sugar-free
  • 120 ml chicken stock
  • 1 tablespoon dried culinary lavender buds
  • 1 tablespoon honey
  • 1 tablespoon butter
  • Salt and freshly ground black pepper to taste
  • Fresh thyme sprigs for garnish
  • 1 lemon sliced into rounds, for serving

Method
 

  1. Prepare the lavender lemonade syrup: In a small bowl, combine the lemonade, chicken stock, and dried lavender buds. Stir gently and let it sit for 5 minutes while you prep the chicken. You'll notice the liquid taking on a pale, golden hue and a gentle floral aroma.
  2. Season and sear the chicken: Pat the chicken breasts dry with kitchen paper. Season both sides generously with salt and pepper. Heat the olive oil in a large frying pan over medium-high heat until it shimmers and ripples. Place the chicken in the pan — you should hear a satisfying sizzle. Cook for 4–5 minutes per side until the chicken is deep golden brown and releases easily from the pan. The surface should look crisp and caramelised. Remove the chicken to a plate and set aside.
  3. Sweat the aromatics: Lower the heat to medium. Add the diced shallots to the pan. They should sizzle gently and release a sweet, oniony fragrance. Cook for 2 minutes, stirring often, until they turn translucent and soft. Add the minced garlic and cook for another 30 seconds until fragrant but not browned.
  4. Build the lavender lemonade sauce: Pour the lavender lemonade mixture into the pan, scraping up any browned bits from the bottom with a wooden spoon. Those bits are packed with flavour. Bring the liquid to a steady simmer — you'll see small bubbles breaking the surface. Let it bubble for 3–4 minutes, reducing slightly until it smells intensely floral and sweet.
  5. Finish the sauce: Stir in the honey and butter. The butter will melt into the sauce, creating a silky, glossy finish. The sauce should look slightly syrupy and coat the back of a spoon. Taste and adjust seasoning with salt and pepper.
  6. Return the chicken to the pan: Nestle the seared chicken breasts back into the lavender lemonade sauce, spooning some sauce over the top. Reduce the heat to low, cover the pan, and let it gently simmer for 5–6 minutes. The chicken should feel firm to the touch and the internal temperature should reach 74°C. The sauce will have thickened further and cling beautifully to the meat.
  7. Rest and garnish: Remove the pan from the heat and let the chicken rest in the sauce for 3 minutes. This allows the juices to redistribute. Garnish with fresh thyme sprigs and lemon slices before serving.

Notes

Use good-quality lemonade (not diet or sugar-free) for the best flavor. The lavender buds can be found in the spice aisle or online; culinary lavender is essential to avoid bitterness.
