Ingredients
  

  • 500 g ripe peaches peeled and chopped
  • 150 g granulated sugar
  • 50 g honey
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 cup Greek yoghurt optional
  • 1 tablespoon grated ginger optional

Method
 

  1. Prepare the peaches - In a large bowl, combine the chopped peaches, granulated sugar, honey, water, lemon juice, and salt. Mix well until the sugar is dissolved. Cover the bowl with a lid or plastic wrap and refrigerate for at least 30 minutes to allow the peaches to infuse with the flavours.
  2. Puree the peach mixture - Remove the bowl from the refrigerator and puree the peach mixture in a food processor or blender until smooth. You may need to stop the machine and scrape down the sides a few times to ensure everything is well mixed.
  3. Add the Greek yoghurt (optional) - If using Greek yoghurt, stir it in at this stage to create a creamy texture.
  4. Chill the mixture - Pour the peach mixture into a medium-sized bowl and refrigerate for at least 30 minutes to chill.
  5. Freeze the mixture - Pour the chilled mixture into a freezer-safe container with a lid and place it in the freezer. Every 30 minutes, remove the container from the freezer and use a fork to scrape the mixture and break up any ice crystals that have formed. This is called "tempering" and will help create a smooth texture.
  6. Add the grated ginger (optional) - If using grated ginger, stir it in at this stage to give the sorbet a hint of spice.
  7. Freeze until set - Continue to freeze the sorbet for another 2-3 hours, or until it's set and scoopable.
  8. Serve - Remove the sorbet from the freezer and scoop it into bowls or cones. You can serve it plain or garnish with fresh fruit, whipped cream, or a sprinkle of sugar.

Notes

For the best flavor, use very ripe, fragrant peaches. The optional Greek yogurt makes it creamier, more like a frozen yogurt, while the ginger adds a lovely warm undertone. Ensure thorough scraping during the freezing process to prevent large ice crystals and achieve a smoother texture.
